Sweet Italian Sausage

This recipe was given to me by one of my Italian neighbours back in Conneaut. At the time, Italian sausage was not widely available in Australia where I live so Joe Armeni gave me this recipe. I used to ask my butcher to make it and fill casings or else I would just use it as ground sausage or sausage patties. My son, Timothy would often make them at home and fill the casings himself.

Ingredients

  • 5 Kg (11 lbs) Lean Pork Shoulder (pork butt)
  • 1/4 C Crushed Garlic
  • 1/4 C Salt
  • 1/2 C Fennel Seeds
  • 1/4 C Ground Black Pepper
  • 1 1/2 t. Allspice
  • 1/4 C Chopped fresh oregano (or 2 tsp dry)
  • 1 1/2 C Dry Red Wine
  • 1/4 C Paprika

Method

Step 1 – Combine all ingredients and fill casings, make patties, or use bulk.

Special Instructions

I usually fry the sausages and serve with fried peppers and onions or else cook them in my pasta sauce. I will post other recipes for these and other dishes.
