Italian Wedding Cookies

Not only are these cookies often seen at Italian weddings, they are a favourite for any occasion. My cousin Sherry is an expert at these.

Ingredients

COOKIES
  • 6 Large eggs (slightly beaten)
  • 3 tsp baking powder
  • 3 tsp vanilla
  • 3/4 cups oil
  • 1 cup sugar
  • 5 cups flour
ICING
  • 2 cups powdered (icing) sugar
  • 5 Tbsp water (for harder icing, I use 2 egg whites instead of the water.)
  • 1 tsp flavoring; vanilla, almond, anise, etc
  • food coloring

Method

Step 1 – Preheat oven to 350 F (180 C). Line a baking sheet with baking paper. Step 2 – Combine all wet ingredients Step 3 – Add flour and combine to form a sticky dough Step 4 – Roll into 1 inch (3 cm) balls and place on baking sheet Step 5 – Bake until bottoms star to turn brown. Tops will still be white. (About 12 – 14 minutes) While cookies are cooling, make the icing: Step 1 – Combine all ingredients except food colouring. Step 2 – Add the food colouring until the desired colour is reached. (Divide the icing into separate bowls before adding the colour to make different colours. Step 3 – Drizzle or spread some icing onto each cookie.
