Italian Meat Balls

I always thought that Ellen made the BEST meatballs. She used to bring them to the reunions. The secret to these meatballs is using oatmeal instead of breadcrumbs. This gives the meatballs a creamy texture.

Ingredients

  • 2 pounds of Ground Beef
  • 1 small onion (chopped)
  • 2 eggs
  • 2 cloves of garlic (Crushed)
  • 1 cup oatmeal
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon dried basil
  • 1 teaspoon dried marjoram
  • 1 teaspoon dried parsley
  • 1/4 cup grated parmesan cheese

Method

  1. Step 1 Combine all ingredients
  2. Step 2 Form into 2 inch (5 cm) balls
  3. Step 3 Brown in frying pan and/or
  4. Step 4 Place into sauce, bring to boil, then simmer for 1 hour
