Cherry Ripe Slice
This recipe was given to me by my neighbor, Barbara Dowdell. These type of desserts, slices, are very popular with Australians. It is a family favorite.

Ingredients
BASE
TOPPING
1/4 lb (125 gm) of Copha (Coconut Oil)
1/4 lb (125 gm) of Copha (Coconut Oil)
7 oz. (250 gm) condensed milk (not evaporated)
7 oz (200 gm) dark melting chocolate
few drops red food color
1/2 lb (250 gm). vanilla wafers (crushed) (250 gm arrowroot biscuits)
1/2 lb. candied or marachino cherries (chopped)
1/2 lb. coconut
Method
Base
Melt Copha over low heat.
Add condensed milk, and food color. Combine.
Remove from heat. Add crushed vanilla wafers, cherries and coconut.
Mix. Press into shallow, greased 12 x 10 inch (300mm x 250mm) pan.
Topping
Melt shortening. Add drinking chocolate.
Pour over base.
Chill until set.
Cut into 40 pieces (10 x 4). Serve
