Buckeyes are a sweet made by dipping a peanut butter filling into chocolate. The resulting sweet resembles a buckeye, a brown nut with a tan circle, (so named because it resembles a deer’s eye) Ohio is known as the Buckeye State

Ingredients
For the filling
2 Cups peanut butter ( I tend to prefer crunchy, but smooth is fine)
4 Cups powdered (icing) sugar
1 tsp vanilla
16 oz (250 gm) butter
8 oz (250 gm) graham cracker crumbs (in Australia I use malt biscuits)
For the Coating:
12 oz (375 gm) semi-sweet chocolate chips or chocolate melts
1 oz (1/4 bar) Parrafin wax or 30 gm Copha
Method
Step 1 – Combine first 4 ingredients. Add crumbs and mix by hand.
Step 2 – Form into balls about the size of a walnut
Step 3 – Place on baking tray and refrigerate for 2 hours or overnight
Step 5 – Stick a toothpick in and dip in chocolate leaving the top uncoated to resemble a ‘buckeye’
Chocolate coating:
Step 1 – Gently melt wax or Copha in the top of a double boiler (or a non-plastic bowl over simmering water. Be careful not to get any water in the mixture.
Step 2 – Remove from heat. Add chocolate chips and stir gently to melt.
