Bruschetta

A tasty fresh accompaniment to Italian food.

Ingredients

  • · 4 large slices of Sourdough bread or Crusty Italian Bread
  • · ¼ Cup Vegetable oil
  • · 1 Clove of Garlic – Chopped
  • · 2 Tomatoes Diced
  • · 1 Sprig Fresh Basil
  • · 1/2 Onion Diced

Method

  1.  In a small bowl, combine 3 T vegetable oil and garlic
  2.  In another bowl combine diced tomato and onion
  3.  Tear Basil leaves and add to vegetable mixture
  4.  Toast one side of the bread slices under griller
  5. Brush with garlic oil
  6.  Spoon the tomato mixture onto the toast.

Special Instructions

If you like, you can grate some parmesan cheese over the top, or drizzle some balsamic glaze over.
